Kaju Chicken (Cashew Chicken)


Kaju chicken (cashew chicken) is a typical India dish which is best served with garam-garam Tawa roti or parantha. This chicken recipe is based primarily on kaju (cashew nuts) paste.

Ingredients:
  1. Chicken leg - 6 pieces
  2. Kaju (Cashew nuts) paste - 4-5 table spoon
  3. Onion - 2 medium size
  4. Cinnamon (dalchini) - 1 inch stick
  5. Cloves (laung) - 5-6 pieces
  6. Red chili powder -1/2 tea spoon
  7. Ginger powder - 1 tea spoon
  8. White oil - 5 table spoon
  9. Turmeric - 1/4 tea spoon
  10. Salt to taste
  11. Sugar - 1/2 tea spoon
  12. Water - 1 cup

Method:
  1. Make a powder of cinnamon and cloves in a mixer
  2. Roughly chop the onions
  3. Heat the oil
  4. Add onion and fry it till it turns a bit brownish
  5. Add kaju paste, cinnamon & cloves powder, ginger powder, red chili powder, turmeric powder, sugar and salt
  6. Fry them well till you see the oil to separate
  7. Add the chicken mix it well and then cover with lid and leave in low flame for 5 minutes
  8. Add water and boil the chicken under lid. Stir at regular intervals.
  9. Keep cooking till the chicken is soft enough

Now its ready to serve.
