Caramel Pudding

Caramel pudding is very easy to make at home. I remember in my childhood days going to the Amber restaurant in Calcutta and have caramel pudding for dessert . It was so yummy. I loved it…until one day I thought to prepare my favourite caramel pudding for dessert at home. There are many places where we find this recipe, but I have listed here the preparation I make at home. It tastes great and I documented the recipe such that it tastes same every time I cook. So no worries if you have guests coming over.

  • Serves: 4
  • Preparation Time: 10 min
  • Cooking Time: 10 min

Cookware used :

  1. Gas Oven
  2. Frying Pan
  3. Pressure Cooker
  4. Bowl for whisking egg
  5. Utensil for boiling milk
  6. Utensil with lid, which can go inside the pressure cooker

Ingredients :

  1. Milk (2 cups)
  2. Eggs (3 pcs)
  3. Sugar (4¼ tablespoon)
  4. Vanila essence (1 teaspoon)
  5. Butter (½ teaspoon)

Method to prepare Caramel Pudding :

  1. Boil the milk and add sugar (3 tablespoon). Keep aside for it to cool.
  2. In a separate bowl whisk the egg and add the vanila essence.
  3. Add this to the milk you have kept aside and mix well.
  4. Now its time to make the caramel. Heat the butter in a frying pan, add 1½ teaspoon sugar and mix.
  5. When the colour turns brown, your caramel is ready.
  6. Grease the utensil, where you will make the pudding, with little butter.
  7. Pour the caramel and then add the milk mixture into it.
  8. Pour some water in the pressure cooker.
  9. Cover the utensil with the lid and put it inside the pressure cooker.
  10. Let 4 whistles blow.
  11. Now bring out the utensil, let it cool and keep it in the refrigerator to chill.
  12. Before serving turn the utensil upside down for the caramel pudding to slid out onto a plate.
  13. Serve the caramel pudding cold

    Hi :) i too love indian caramel pudding:) the only problem i had with it when i prepared at home was the eggy smell, did u also get that?

    Hi Roopa,

    I am not sure if you have used the proportions mentioned above. With this proportion I do not get an eggy smell.

    However, in general if you have the eggy smell , increase the portion of vanilla essence slightly (approx. 1 teaspoon more) and the smell would go.
